Slimming World Syn Free Cauliflower 'Fakeaway' Pizza Base >> Recipe



Pizza night fakeaway on Slimming World!


I love pizza, we are totally obsessed and complete addicts. I recently joined Slimming World so have been looking for a SW friendly pizza recipe that isn't packed with syns, utilises my hexA allowance and provides a good chunk of speedy free foods too.

My whole pizza was just four syns as I used my daily hexA for mozzarella and just added a little extra which I syned for. I added anchovies which are 1 syn too, but you can add whatever you like!

This pizza recipe is suitable for Slimming World as well as low carb clean diets such as keto and paleo, as the base is made from cauliflower instead of grains. I'll warn you this is a bit of a faff to make and takes some time to prepare BUT it looks like the real thing, it tastes good, it won't throw you off your diet, it's filling and leaves you with Syns for the day to spend elsewhere - need any more reasons to try it?

If you're thinking 'yuck cauliflower' then I would still give this a try as it takes on a very different smell and flavour. The prep part will make your house smell of boiled cauliflower but it's well worth it and it takes on an almost cake like texture when it's ready. This recipe will take a little tweaking depending on your oven, how thick you make it, how much your cauli is blitzed etc but as a rough guide it should help you on your way to preparing a guilt free pizza whilst staying on plan.

This pizza base is best served (in my opinion) with strong flavoured toppings, think anchovies, olives, capers to make it even more pizza like. I've done a step by step recipe below so you can see what it should look like. I'm sure there are a million other recipes like this out there but this works so much better for me that others I've tried.

Base Ingredients


  • 1 Cauliflower
  • 2 Eggs
  • Pinch Oregano or Mixed italian herbs
  • Pinch Garlic powder
  • Salt
  • Pepper
  • 1 cal spray

You Will Need


  • Baking paper
  • 2 X pizza trays/baking trays
  • Mixing bowl
  • Blender
  • Spoon
I love this blender but you could use any!

Method


First pre-heat the oven to around 180 degrees, 160 if it's fan assisted.

Next you want to remove all the nice fluffy bits of cauliflower from the stalks, if you have an average sized cauli you can use it all just focus on the heads.



Next pop the cauliflower in a blender and blitz until it has all transformed into tiny bits as small as your blender will allow, without turning to mush!





Next mix the eggs, herbs and seasoning separately and add to the bowl of 'cauli-flour'.




Next just cover your 'flour' in cling film and microwave for around 5 minutes, mixing half way through so it's evenly cooked.and simply mix it all together. 

At this point you'll probably be thinking 'what the hell have I done wrong?' but no, it will look like rice pudding in consistency and it will be fine, trust. It will look something like this ... and smell a lot like cauliflower has exploded in your house.




Next you just need to pop some baking paper on your tray of choice, spray with fry lite (I didn't but it could help crisp up the base) trim the edges and spread on your mix. Mine was around a centimetre in depth or just slightly less, on a 12 inch round pizza tray.





Now it's time for the oven. This base needs thoroughly cooking before topping so it has some kind of firmness to it. Pop the base in the oven for around 25 minutes, or until it looks slightly browned on top.




Now you'll need to flip the base over to cook on the other side, see I did say it was a faff, but it is worth it if you have the time! This is where pizza tray 2 comes in. Cover the second tray in paper, lay it over your cooked base and quickly flip it over. You can then carefully peel off the baking paper ready to pop back in the oven.

You can see by the little bit that stuck to the paper how the consistency has changed to a much more cake/dough like texture - magic!




Now pop the base back in the oven for 10 to 15 minutes until it's thoroughly cooked through.




And voila, we have something that resembles a pizza base! The cauliflower smell fades into a much more cakey/cheesy kind of smell bizarrely and it's time for toppings. I left mine to cool completely to make it firmer.




We always use cartons of passatta for topping our pizzas, it's tasty, cheap and virtually free of anything calorific. For this particular pizza I opted to use my daily HexA of cheese (mozzarella) which was 50g and a further 25g from my syn allowance which was 3 syns. If you aren't on Slimming World, I apologise for the foreign language! Basically, it's all good.

For me, this pizza works so much better with stronger flavour toppings. I love anchovies so it's one syn for a small can, free bacon and veg as well as little more oregano on top for that true pizza flavour.




Pop your pizza 'fakeaway' into the oven and cook until your cheese has browned and toppings are cooked - around 10-15 minutes.

Leave to cool for a few minutes so that the slices firm up a little which makes it easier to eat.

And there you have it. A guilt free, low syn, high speed Slimming World friendly pizza. It doesn't taste like a Domino's pizza, it's different to normal pizza in texture but you can eat the whole thing without breaking your diet, feel stuffed and not feel like you are missing out on that junk that can be so bad for us, and probably got me into this mess in the first place.

The whole 12 inch pizza is just 4 syns but you could quite easily halve this (or less) and serve with a big ol' salad to save even more syns for a sweet treat afterwards. Me, I just faced dived the whole thing.
