Say it with pancakes...
It's February, officially the month of pancakes and love! I adore pancakes and this is my favourite basic recipe, with a little twist for Valentine's day. This easy recipe requires the following ingredients;
- 100g self raising flour
- 2 large eggs
- 300ml milk
- Oil for frying
- Pancake toppings
The added twist for Valentine's day is that we add a little heart shaped bit of batter before the main pancake - genius hey? All you need to do is roughly draw a heart shape with a teeny bit of batter. I used a spoon this time, but for a neater look you could use a condiment style bottle. Then just add the rest of the pancake batter and cook as normal. You could even add some food colouring to make the hearts pop out more too.
Once your pancakes are cooked you can stack them with your favourite toppings! Here's some ideas;
- Banana & syrup
- Maple syrup & pecans
- Bacon & maple syrup
- Nutella
- Sugar & lemon juice (the greatest ever!)
I made this batch for Mr. W to cheer him up after a tough week and will be making some more for us all on Valentine's morning too. Using the self raising flour makes them nice and thick as opposed to the usual British pancake, I think these are so much better. What's your favourite pancake topping?
