Delicious Turkey Meatballs In Homemade Tomato Sauce >> Family Recipe



Meatballs!



I absolutely love turkey and actually the Christmas dinner kind is probably my least favourite, it's so lean and versatile it can actually be used in lots of different ways and makes a brilliant swap when switching to a healthier lifestyle.

I was contacted recently by British Turkey, who have teamed up with health coach and best-selling cookery writer, Madeleine Shaw. Madeleine has created a selection of delicious turkey based recipes to promote the benefits of cooking with turkey for people just like me. Turkey is healthy, relatively low cost and completely delicious!

I thought I would share one of these recipes which all of us have enjoyed and devoured. It's super simple and could easily be cooked in a slow cooker or warmed up for a quick and easy dinner.

Just how amazingly delicious does this look?! I can assure you it tastes even better.




Now, I make no secret of the fact that I am pretty useless when it comes to cooking. I love it, but Adam (my husband) has always loved cooking and enjoys every part of it so of course I have been more than happy with a live in chef! 

I am trying to cook a little more now though especially as the kids do like to eat pretty much the whole time they are awake. This recipe is super simple and so tasty. I love making things from scratch and knowing exactly what we are eating too. If you'd like to try this out for your family one night, you can find the recipe below.



The Recipe



Serves 4

Ingredients


  • 1 tbsp of melted Coconut oil
  • 800g British turkey breast mince
  • 1 small onion, finely diced
  • 1 small red pepper, finely diced
  • 1 clove garlic, minced
  • 2 tbsp chopped fresh organic parsley
  • A pinch of Sea salt and fresh pepper
  • 2 free range eggs


Sauce


  • 1 onion, chopped finely
  • 2 tablespoons coconut oil
  • 1 garlic clove (crushed)
  • 1 teaspoon dried thyme
  • 1 tsp of oregano
  • 2 x cans of chopped organic tomatoes
  • 1 teaspoon sea salt


Method

Preheat oven to 180°C. Place all the meatball ingredients in a medium bowl and mix everything together. Roll into 1½-inch size balls.

For the sauce, fry the onion in a little coconut oil and salt. After five minutes add the rest of the ingredients. Cook for 10 minutes.

Place the meatballs on a roasting tray, evenly spaced and poor over the freshly made sauce. Place in your preheated oven and bake for 20 minutes.

Enjoy with a side of your favourite vegetables or courgetti.
